Hearty Beef Vegetable Soup
Ingredients:
- 1 lb (450 g) stewing beef, cut into small chunks
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 2 potatoes, peeled and cubed
- 3 cloves garlic, minced
- 4 cups beef stock
- 1 cup diced tomatoes (canned or fresh)
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions:
- Heat olive oil in a large pot and brown the beef over medium-high heat.
- Remove and set aside.
- In the same pot, sauté onion, carrots, celery, and garlic until softened.
- Add the beef back to the pot along with potatoes, beef stock, diced tomatoes, thyme, and bay leaf. Stir well.
- Bring to a boil, then reduce the heat to low. Cover and simmer for 1.5 hours, or until the beef is tender.
- Season with salt and pepper to taste.
- Serve hot with crusty bread.
