One-Pot Beef and Vegetable Stew

Ingredients:

  • 2 lbs beef stew meat, cubed
  • 4 cups beef broth
  • 1 lb potatoes, diced
  • 1 lb carrots, sliced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 2 teaspoons dried thyme
  • Salt and pepper to taste

Instructions:

  1. In a large pot, brown the beef stew meat over medium heat.
  2. Add the onions and garlic, and sauté until translucent.
  3. Stir in the beef broth, potatoes, carrots, diced tomatoes, tomato paste, thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 1.5-2 hours, or until the beef is tender.
