One-Pot Beef and Vegetable Stew
Ingredients:
- 2 lbs beef stew meat, cubed
- 4 cups beef broth
- 1 lb potatoes, diced
- 1 lb carrots, sliced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 tablespoons tomato paste
- 2 teaspoons dried thyme
- Salt and pepper to taste
Instructions:
- In a large pot, brown the beef stew meat over medium heat.
- Add the onions and garlic, and sauté until translucent.
- Stir in the beef broth, potatoes, carrots, diced tomatoes, tomato paste, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5-2 hours, or until the beef is tender.
