Perfect Roast Potatoes Recipe
Crispy on the outside, fluffy on the inside – the ultimate roast potatoes for any occasion!
Ingredients:
- 2 lbs (1 kg) potatoes (e.g., Maris Piper, Yukon Gold, or Rooster)
- 4 tbsp goose fat or olive oil
- 1 tsp sea salt
- 1/2 tsp black pepper
- 2 sprigs fresh rosemary (optional)
- 3 cloves garlic, smashed (optional)
Instructions:
- Preheat the Oven: Preheat your oven to 400°F (200°C) or 375°F (190°C) for fan ovens.
- Prepare the Potatoes:
- Peel the potatoes and cut them into even-sized chunks (about 2 inches).
- Rinse the potatoes under cold water to remove excess starch.
- Parboil the Potatoes:
- Place the potatoes in a large pot of salted water and bring to a boil.
- Simmer for 8–10 minutes, or until the edges begin to soften.
- Drain the potatoes and allow them to steam dry for 2 minutes in the colander.
- Roughen the Edges:
- Shake the potatoes in the colander to roughen their edges. This step helps create a crispy exterior during roasting.
- Prepare the Baking Tray:
- Place the goose fat or olive oil in a large roasting tray and heat it in the oven for 5 minutes, until sizzling hot.
- Roast the Potatoes:
- Carefully add the potatoes to the hot tray, ensuring they’re coated in the fat.
- Season with sea salt and black pepper.
- (Optional) Scatter rosemary sprigs and smashed garlic cloves over the potatoes for extra flavor.
- Bake to Perfection:
- Roast for 45–60 minutes, turning the potatoes halfway through, until golden and crispy.
- Serve Hot:
- Transfer the roast potatoes to a serving dish and garnish with extra rosemary if desired.
