Perfect Roast Potatoes Recipe

Crispy on the outside, fluffy on the inside – the ultimate roast potatoes for any occasion!

Ingredients:

  • 2 lbs (1 kg) potatoes (e.g., Maris Piper, Yukon Gold, or Rooster)
  • 4 tbsp goose fat or olive oil
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 2 sprigs fresh rosemary (optional)
  • 3 cloves garlic, smashed (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) or 375°F (190°C) for fan ovens.
  2. Prepare the Potatoes:
    • Peel the potatoes and cut them into even-sized chunks (about 2 inches).
    • Rinse the potatoes under cold water to remove excess starch.
  3. Parboil the Potatoes:
    • Place the potatoes in a large pot of salted water and bring to a boil.
    • Simmer for 8–10 minutes, or until the edges begin to soften.
    • Drain the potatoes and allow them to steam dry for 2 minutes in the colander.
  4. Roughen the Edges:
    • Shake the potatoes in the colander to roughen their edges. This step helps create a crispy exterior during roasting.
  5. Prepare the Baking Tray:
    • Place the goose fat or olive oil in a large roasting tray and heat it in the oven for 5 minutes, until sizzling hot.
  6. Roast the Potatoes:
    • Carefully add the potatoes to the hot tray, ensuring they’re coated in the fat.
    • Season with sea salt and black pepper.
    • (Optional) Scatter rosemary sprigs and smashed garlic cloves over the potatoes for extra flavor.
  7. Bake to Perfection:
    • Roast for 45–60 minutes, turning the potatoes halfway through, until golden and crispy.
  8. Serve Hot:
    • Transfer the roast potatoes to a serving dish and garnish with extra rosemary if desired.
