Slow-Cooked Pulled Pork Sandwich

Ingredients:

  • 4-5 lbs pork shoulder (also known as pork butt)
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 cup barbecue sauce
  • 1/2 cup apple cider vinegar
  • 1/2 cup chicken broth
  • 1/4 cup brown sugar
  • 1 tablespoon smoked paprika
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional)
  • Fresh thyme for garnish

Instructions:

  1. Prepare the Pork:
    • Rub the pork shoulder with olive oil, salt, pepper, smoked paprika, chili powder, cumin, and cayenne pepper (if using).
  2. Sear the Pork:
    • In a large skillet over medium-high heat, sear the pork shoulder on all sides until browned.
  3. Prepare the Slow Cooker:
    • Place the sliced onion and minced garlic at the bottom of the slow cooker.
    • Place the seared pork shoulder on top of the onions and garlic.
  4. Add the Liquid:
    • In a bowl, mix together the barbecue sauce, apple cider vinegar, chicken broth, and brown sugar.
    • Pour this mixture over the pork in the slow cooker.
  5. Cook the Pork:
    • Cover the slow cooker and cook on low for 8-10 hours, or until the pork is tender and easily shredded with a fork.
  6. Shred the Pork:
    • Remove the pork from the slow cooker and place it on a large plate or cutting board.
    • Use two forks to shred the pork, discarding any large pieces of fat.
  7. Combine and Serve:
    • Return the shredded pork to the slow cooker and mix it with the juices and onions.
    • Let it cook on low for an additional 30 minutes to absorb the flavors.
  8. Garnish and Enjoy:
    • Serve the pulled pork with a garnish of fresh thyme and your favorite sides, such as coleslaw, cornbread, or pickles.
