Slow-Cooked Pulled Pork Sandwich
Ingredients:
- 4-5 lbs pork shoulder (also known as pork butt)
- 2 tablespoons olive oil
- 1 large onion, sliced
- 4 cloves garlic, minced
- 1 cup barbecue sauce
- 1/2 cup apple cider vinegar
- 1/2 cup chicken broth
- 1/4 cup brown sugar
- 1 tablespoon smoked paprika
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (optional)
- Fresh thyme for garnish
Instructions:
- Prepare the Pork:
- Rub the pork shoulder with olive oil, salt, pepper, smoked paprika, chili powder, cumin, and cayenne pepper (if using).
- Sear the Pork:
- In a large skillet over medium-high heat, sear the pork shoulder on all sides until browned.
- Prepare the Slow Cooker:
- Place the sliced onion and minced garlic at the bottom of the slow cooker.
- Place the seared pork shoulder on top of the onions and garlic.
- Add the Liquid:
- In a bowl, mix together the barbecue sauce, apple cider vinegar, chicken broth, and brown sugar.
- Pour this mixture over the pork in the slow cooker.
- Cook the Pork:
- Cover the slow cooker and cook on low for 8-10 hours, or until the pork is tender and easily shredded with a fork.
- Shred the Pork:
- Remove the pork from the slow cooker and place it on a large plate or cutting board.
- Use two forks to shred the pork, discarding any large pieces of fat.
- Combine and Serve:
- Return the shredded pork to the slow cooker and mix it with the juices and onions.
- Let it cook on low for an additional 30 minutes to absorb the flavors.
- Garnish and Enjoy:
- Serve the pulled pork with a garnish of fresh thyme and your favorite sides, such as coleslaw, cornbread, or pickles.
